Jalebi..and what started it all

I love looking at party pictures,especially for the food and the colourful attire that the Indian ladies wear!!On one such occasion I saw the tray full of yummy jalebis that the hostess had made for her 200+ guests to enjoy. I was amazed at the effort and motivated enough to give jalebi making a try.
In the past have tried making them with store bought mixes,but was never successful in even getting to the frying stage and Jalebis were something that can only be bought and enjoyed. Not anymore!!


In my usual blog hopping I can across few interesting recipes and techniques and here are the ones I tried. I had all the ingredients needed and happily gave it a try first thing next day.
It was very recently that I had got a new smart phone(not as smart as my iPhone which I dearly miss),but this one takes amazing pictures and I clicked the jalebis single and as group and for the very first time uploaded it straight to my Facebook Wall. Few minutes later I visited my wall only to see it flooded with comments asking for recipes etc. Since then that album in facebook has reached more than 100 pics within months and its a place I post pictures of my sucesses in my little kitchen.
I have tried 2 recipes for Jalebi,each with different ingredients and method.

1)Jalebi with Urud Dal (Adapted from here)


Ingredients:
Urud Dal(I used whole Dal-split also works): 1 Cup : Wash and soak for few hours
Baking soda: A pinch
Salt: to taste/a Pinch
Red/Orange Food Color: few drops to attain desired shade


For the Sugar Syrup:
Sugar:1 1/2 Cup
Water :1 Cup
Lime or lemon juice:1 tsp
Cardamom: 1-2 seeds crushed


Method:
Grind the urud dal without adding much water into a smooth paste and transfer to a bowl. Mix in the food color and salt and add baking soda just before pouring into a zip-lock bag with a hole at the corner. 
Meanwhile make the syrup by  bringing all the ingredients of the sugar syrup except lime juice to a boil in a thick bottom deep vessel. Once it bubbles, bring down to a simmer and add the lime juice(this is to prevent crystallization)


In a  frying pan, add enough oil to bring it to at least 1 inch height. Once hot, squeeze out the batter making desired pattern as you go. I made a circle and then smaller circles around it .None of them were perfect though (who cares as long as they taste good) 
Fry them on both sides and then dunk them in the warm sugar syrup.Turn to make sure they are coated well with syrup and remove to as serving plate.
Repeat with the remaining batter. Serve hot.

I got about 15  jalebis from this quantity.The yield depends totally on the size of the jalebis you end up making!!
